One of the things that I love most about cooking is it's creative nature. For as long as I can remember, I have been a creative individual, and lately (though I still LOVE to decorate any space!!!) cooking has done a lovely job of filling any creative void that I might encounter.

Bowtie Pasta with Peas and Carrots

Pasta with Peas and Carrots
1 Box Bowtie Pasta, cooked to al dente reserving 1 cup of cooking water
1 Medium Onion, diced
1 Clove Garlic
2 Carrots, diced
1 Box Early Peas in Butter Sauce
4 Oz. Cream Cheese
4 Oz. Goat Cheese
Salt and Pepper, to taste
Olive Oil, for sauteeing

Gnocci with Roasted Squash

This is a recipe that I've had the idea for in my head for a few weeks now, but we've been so busy that I haven't taken the time to give it a try. Last night was the night, and I was very excited with the outcome. . .Give it a try and let me know what you think!
1 lb. Fresh or Frozen Gnocci (Of course, you can make your own. I'm just not that patient or talented!)
3-4 Medium Squash, Zucchini, or any combination of the two, cut into bite-sized pieces (I used yellow squash and zucchini.)
