Slow Cooker Pork Roast with Tomatoes and Mushrooms

1 3-4 Pound Pork Roast

1 Large Onion, thinly sliced

8 oz. Package Fresh Mushrooms, sliced (If you need to sneak these in, you can finely chop them, and they'll never know they're there!)

1 Large Can Diced Tomatoes, drained

1 Can Mushroom Soup

1 Can of Wine (white or red) or Chicken Stock, fill the mushroom soup can

Salt and Pepper, to taste

Salt and pepper both sides of roast and set aside.  In a slow cooker, layer the onions and mushrooms on the bottom of the cooker.  Pour in the tomatoes and mushroom soup and wine or stock.  Stir to combine.  Nestle the roast down into the mixture.  Cook on low for 4-6 hours, until the pork is done.  Remove the pork from the slow cooker and allow to rest on a cutting board for 5 minutes.  Slice the pork into thick slices and serve with the tomato gravy and cooked white or brown rice.

Enjoy!!!
