. . .Well at least a meal to remember! For Valentine's night, Amos and I stayed in, and I must say that as it turned out, we were both quite happy that we did!
. . .Well at least a meal to remember! For Valentine's night, Amos and I stayed in, and I must say that as it turned out, we were both quite happy that we did!
On Saturday, while I was trying to decide what I should fix for supper, I had decided on steaks (we had 2 fillets in the freezer), baked potatoes with all the fixings, and maybe some sauteed asparagus.
For some reason once Sunday rolled around, I was feeling quite creative (and apparently accomplished) so I decided that we would have a slightly more elaborate dinner.
On the Menu:
Shrimp Toast
Beef Wellington
Risotto with Fresh Herbs
Roasted Asparagus with Toasted Almonds, Green Onions, and Asiago Cheese

Oh the joy adding a little cheese brings!
The Wellingtons and the Asparagus are out of the oven. . .
The first course. . .Shrimp Toast. . .
Ready for the plates. . .
All plated up and ready to eat. . .
But not without a little Pinot Noir!
I just have one word, YUM! This was a most delicious way to spend an evening with my Valentine! And, for the record, it was really quite simple. . .Perhaps I'll post some of the recipes soon. . .
