In honor of National Pie Day, I give you a most delicious recipe for Tomato Pie. . .
1 9" Deep Dish Pie Crust
1 Large Can Diced Tomatoes, drained very well
1 Small Onion, diced
2 Cups Cheddar Cheese
Mayonaise
1 Teaspoon Sugar
Salt
Pepper
Paprika
Hot Sauce

Let's face it, we all need to put those crock pots to use more often, leaving ourselves fewer minutes in the kitchen and fewer dirty dishes. . .

So, it's been a while since I've made this one, but I think it's long over due! It's been a great go-to side for me particularly when guests were coming over. It pairs wonderfully with chicken or fish, especially my Pecan Crusted Chicken. It also serves great at room temperature making it wonderful for parties. . .

Last night, I REALLY did not want to cook! However, due to the cold weather making many of the water mains downtown burst, the places that we would usually go to get a cheap dinner are closed until the water situation is worked out. So. . .I broke down and cooked supper. . .It was actually pretty tasty and VERY EASY!!!
I give you Baked Red Snapper and Green Beans topped with Cheese and a Brown Rice and Tomato Pilaf. . .

So, this one is a little abstract due to the fact that when I cook stir-fry's and things like this, I never really measure. I just add a bit of this and that until it looks, smells, and tastes just like what I had envisioned. And it's always a process that is evolving, as I continuously think of little extras to add in.
With that in mind, here are some ingredients to inspire you. . .
For the Stir Fry:
1 Large Onion, roughly chopped
