A Fun-Filled Weekend that I just MUST share. . .

 

 

 

A couple of weeks ago, Dalton and Amber brought Mary Dalton and Jackson, who you might recognize from last year's Christmas catalog cover, to Nashville for a long weekend.   Needless to say, as soon as they got here, Amos and I just had to take them home with us!  We had the BEST time spoiling them for three whole days!!!

This recipe has been a family favorite of ours for some years now. . .It never fails to please even the pickiest little eaters!

Bowtie Pasta with Peas and Carrots

 

 

 

This one is super simple and really delicious!  Give it a try one night this week. . .

 

Pasta with Peas and Carrots

 

1 Box Bowtie Pasta, cooked to al dente reserving 1 cup of cooking water

1 Medium Onion, diced

1 Clove Garlic

2 Carrots, diced

1 Box Early Peas in Butter Sauce

4 Oz. Cream Cheese

4 Oz. Goat Cheese

Salt and Pepper, to taste

Olive Oil, for sauteeing

. . .Well at least a meal to remember!  For Valentine's night, Amos and I stayed in, and I must say that as it turned out, we were both quite happy that we did!

Forgive me, but I'm a Southern Girl through and through, and snow of any sort gets me super excited!  Give me the amount of snow that we received here in Nashville last Friday - oh, say 6 to 8 inches - and I'm like a giddy school girl. . .

This is a recipe that I've had the idea for in my head for a few weeks now, but we've been so busy that I haven't taken the time to give it a try.  Last night was the night, and I was very excited with the outcome. . .Give it a try and let me know what you think!

 

1 lb. Fresh or Frozen Gnocci (Of course, you can make your own.  I'm just not that patient or talented!)

 

3-4 Medium Squash, Zucchini, or any combination of the two, cut into bite-sized pieces (I used yellow squash and zucchini.)
